Spark Beer
After sampling Spark’s beer at an event last spring, we’ve had our eye on visiting their little brewery on Somerset since then. Pizza became a permanent fixture on their menu late last year, so with another reason to stop by, we scheduled a visit for an early Saturday dinner.
Their menu is almost exclusively pizzas, with one salad and about 10 pizza choices ranging from a plain marinara pizza to fully loaded pizzas with toppings and drizzles. Two varieties of dips complement their pizza menu, both of which I tried. Definitely start off with one of the drinks, which include their own beer, cocktails, and wine.
I was intrigued by a white pizza with garlic butter, potatoes, capers, red onion, mozzarella, and a generous sprinkle of black pepper. As I was returning from the bathroom after ordering, I started second guessing my choice when I laid eyes on another table’s plain cheese pizza. But once mine arrived and I took a scalding hot bite, those thoughts went out the window.
This was really a great pizza. I was in love with the crust, especially after the last ultra thin crust pizza I had that was by all means tasty but didn’t scratch the pizza itch. It cemented to me how much I love crust, when it’s done right at least. This pie boasts a beautiful crisp bite to it without being dry or hard and it was just the right thickness for my taste.
The toppings were well dispersed and plentiful without being applied too heavily. The flavour of this pizza was super well balanced; garlicky base, salty capers, creamy cheese, and a pleasant hit of fresh ground pepper. I felt like I was in heaven tucking into this lovely pizza. The only downsides I could find was a bit of an undersalted crust (though the texture was great!) and the sambal ranch dipping sauce had a watery consistency (but the taste was there). All in all this pizza is up there with some of the best I’ve had the pleasure of tasting in Ottawa.
At 10” I easily polished this pizza off on my own without feeling like I was pushing the limits of my stomach - in fact it felt quite light and didn’t leave me feeling overly stuffed. It clocked in at $17 which is right about the middle of their offerings, starting at $15 for a naked pie and ranging up to $19.

I’ve rated Spark’s pizza seven out of eight slices.
